Massaged Kale & Radish-Pepper Salad!

I recently made a salad, inspired by "Oh She Glows," and it turned out incredibly fantastic!
This recipe is very easy to make, and only took me 10 minutes!


This salad is nutrient dense, and will leave you feeling full & satisfied! See below for the recipe!

Ingredients:
Massage the following in a large bowl (rip up kale leaves, add avocado and lemon, and massage with your hands! Don't be afraid to get messy...)
- 1 large bunch of dinosaur kale or just regular dwarf kale (I used probably 10-15 large leaves, de-stemmed)
- 1 lemon, juiced
- 1/4-1/3 of a ripe avocado

To the above, I added:
- 1/2 long english cucumber, diced
- 1/2 large organic red pepper or 5 small mini peppers (which I used), sliced
- 5 radishes, sliced
- less than 1/4 cup red onion
- 1/2 cup pomegranate seeds
- 2 organic zucchini's, sliced with a vegetable peeler to give long ribbons (not pictured - I added this after the fact, and I really liked what it tasted like!)

Add some freshly cracked pepper, and mix up the salad. Serve & Enjoi!

Raw Vegan Thanksgiving Stuffing!

Thanksgiving has come and gone here in Canada, however it is just around the corner for my fellow American's. Even if it is not thanksgiving, why not eat this all the time? It is simply splendid! The recipe is below:


Ingredients:
- 6 Organic Cremini Mushrooms
- 6 Organic Shitaké Mushrooms
- 2 Stalks Celery
- 2 Mac Apples (or any other kind of apple)
- 1/2 cup FROZEN organic cranberries (frozen means they will melt and juice better)
- 1 Corn on the cob (organic, GMO-free - if you can't find this kind, do not add it. Ask the farmer's you buy it from, I know one who grows just this)
- 1 large shredded carrot
- Soaked Sunflower seeds and pumpkin seeds (3 TBSP of each, soak 6-8 hrs)

Method:
1. Cut everything (or shred) into small bite-sized pieces
2. Put in large bowl
3. Juice ONE LEMON, and pour on top
4. As for spices, add anything festive - for myself, I added poultry seasoning which is a mixture of sage, oregano, rosemary, onion and garlic
5. Chop up one piece of garlic and put on top
6. Mix ingredients and let sit for 10 mins
7. Lay out on dehydrator sheet and put into dehydrator at 110ºF to prevent enzyme disruption (or if you don't have a dehydrator set to lowest oven temperature and leave oven door open)

Dehydrate until desired dry-ness, mine was in there for about 3 hours.

Papaya Sunshine Smoothie!


It is papaya season! At least, I think it is. I always find the best quality papayas come out around winter time. The ones in summer are always hard and weird tasting. Before I did this recipe I didn't know that the two ingredients I used are two big "no-no's" in the food combining world (oops), however I did NOT get any digestive distress, so you will need to try this out for yourself and see if your tummy is okay with it!

So to get started you will simply need:
- Blender
- 1 medium papaya
- 4 oranges

Directions:
1. Cut the papaya in half and scoop out the seeds
2. Skin the papaya and cut into pieces that can go straight into the blender
3. Juice the oranges with a manual juicer or however you like to juice your oranges (it is okay if some pulp is left behind - it will all be blended either way!) and put the juice in the blender
4. Pulse blend (to reduce oxidation) and serve!

Raw Chewy Granola Bars!


Have you ever wanted a raw, vegan, gluten free granola bar that is chewy and tastes like heaven? Well now you found it! 

This recipe is one of my all time favourites, and although I no longer consume any type of grains (including ones that are gluten free - for my own personal reasons), that is no reason to keep this lovely recipe away in the dark. I rather share it with all of you :)

Ingredients:
Pumpkin seeds (1/2 cup soaked overnight)
Sunflower seeds (1/2 cup soaked overnight)
Hemp Seeds (1/4 cup)
3-4 very ripe bananas
Organic Raisins (1 cup)
Organic dried (unsweetened) cranberries (1 cup)
*Optional - if you can find them, dried unsweetened cherries (1/2-1 cup)
NON-toasted Buckwheat (1 1/2 cups, soaked and sprouted for 2 days - look up how to sprout buckwheat on google - type in "how to sprout buckwheat")
Chia Seeds (1/4 cup, ground finely)
Spirulina (2-3 tbsp)

Method:
Mash the bananas, mix in the chia seeds and hemp seeds, and mix together. Once this is incorporated add the sprouted buckwheat, pumpkin and sunflower seeds. Mix together. Then add raisins, cranberries and cherries (optional) or any other kind of dried fruit you can think of - goji berries are good here too! 

Spread this mixture onto dehydrator sheets into a large square. Score lightly to make smaller squares as shown in the picture (this makes it easier when they are dried to break them apart). Dehydrate the square for 10-15 hours at 115ºF (a temperature that will keep your foods raw). At around 10 hours, flip the squares to allow the bottom to dry on the mesh sheet and let dehydrate for another 2-5 hours. 

*Note: If you do not have a dehydrator you can use a cookie sheet and oven on the lowest temperature (they will not take as much time, mind you). This means that they will not be totally raw, but they will still taste amazing!

Two ingredients: Cut up pineapple (one whole small RIPE pineapple, about 3 cups), 5 squeezed oranges (or more depending on how liquid you prefer your smoothies)

Pulse blend (to prevent oxidation) and serve! 

Add some young thai coconut water for some added electrolytes after a heavy workout :)

Raw Low Fat Vegan Fruit Cake (Without feeling guilty cake)

What if you could eat cake EVERYDAY, YEAR-ROUND, and NOT GAIN WEIGHT?

Well, that sounds like one of the best plans I've ever heard! 

Here is a cake that will leave you feeling guilt-free, satisfied and fuelled for the day! And you can eat as many as you please..


Ingredients:
"Icing":
    - 6 dates, softened in water for about 3 hours (or just use very moist dates)
    - Organic vanilla extract (1/2 tsp)
    - little bit of water
    ----> blend these all together until it creates an icing like paste, depending      on how soft your dates are you may need more or less water, so start off by adding less water than you think you need


Cake layers: (use as many as you like of the below, see how tall you can stack!)
    - Mango, sliced thinly to make a bunch of mango layers
    - Bananas, sliced horizontally to make banana layers
    - Cherries, sliced thinly to make cherry layers
   
Put a layer of bananas on the bottom of the plate, next the mango, then the "icing" and then the cherries. Continue this until ingredients are fulfilled!

Raw Corn & Mango Chive Goodness

Hello everyone, I'm back again. Here is a lovely salad I have been addicted to lately. Make sure your corn is non-GMO organic. :)




Ingredients:
Organic Romaine (1 head)
Organic Mixed lettuce of any kind (a few big handfuls)
1 cup chopped organic curly parsley


Toss the above greens together and add:
2 cobs chopped corn
3 mangoes, chopped into cubes
3 oranges, chopped into cubes
Chives (optional)
4 Celery stalks
1/4-1/3 avocado (optional)


On top of this, squeeze some lime juice on top & toss everything together!


I don't even use a salad dressing for this recipe, because I LOVE the combination of all the ingredients and find that it does not need a salad dressing and the lime does its justice!

Blueberry Banana Bliss (BBB) !!!

Quick recipe, you can make it in the morning before you go to work and it only takes like 5 minutes to make (what an easy lunch!!) This sucker packs in 1300 calories around, depending on how many bananas you use!


Ingredients:
10-15 Bananas (depending on the size, usually max 12 will fit in here haha)
2-3 cups ORGANIC blueberries (conventional blueberries are sprayed with many pesticides, please do not use!)


Blend & Drink


Food combination: GOOD (no stomach upsets)

Massaged Kale & Zucchini Entreé

Sorry for not posting a recipe lately, been extremely busy with prepping for final exams and wrapping up my thesis. BUT I came up with this recipe a couple weeks ago, I love it so much. You can leave out the zucchini if you like (that's how I used to eat it) but I just like the extra macronutrients that the zucchini gives you, and it also gives it more weight.

Ingredients:
1 Bunch Kale
1/3-1/4 Avocado (ripe!)
1 Lemon, juiced
Black pepper (optional)
Himalayan salt (optional - I do not use, but I know some of you still eat salt)

Rip kale off thick stems, and break into small pieces (or just rip off, stick in a bowl, then take a LARGE pair of scissors and cut kale - this is the easiest way!)

Take avocado and lemon & massage the kale - this will help pre-digest it for our stomachs, and make chewing easier. Kale is a very tough lettuce, and massaging it will break down the fibers to make it much softer.

Now, you can add in whatever you please. Here is what I added:
-1/3 of a red cabbage, shredded
-2 LARGE carrots, shredded (not pictured, but pictured below)
-3 mangoes, finely chopped
-3 celery stalks
-Mini red/yellow/orange peppers (5)
-Vegetable-peeler sliced zucchini (2)

Here is what it looks like with zucchini (this image does not include peppers or mango, I actually made this recipe again a few days later and didn't have mango or peppers, but you get the idea of what zucchini looks like in it)


Gently toss all ingredients together and chow down (don't forget to CHEW!)

Better Food Combining Chart

I talked about food combining in a post about a month ago, however I found a great picture that will help you understand what you should combine and what you should not combine in terms of fruit. Celery and leafy greens go great with fruit, however starchy carbs like potatoes, rice, etc. do not go all that well (the fruit will ferment with the starch and cause stomach upset or some other problem)

Salad Variety - Mango Avocado Tomato Delight

So I will from time to time show you different things I put in my salads. I don't eat the same thing every day of course, I like to change it up. I find that mango, tomato and avocado are one of THE BEST combinations in the whole world (I'm convinced). The flavour and texture of the three is pretty incredible.


Salad Contents: 
- Romaine (1 head)
- Loose leaf lettuce (the kind you can buy in containers, I like to mix mine up)
- Mango (2-3)
- Tomato (4)
- 1/4-1/3 of an avocado


Mix together and enjoy!


As for Salad DRESSING recipes, I know that everyone has desperate problems with salad dressings, here is a list of the common ones I make:
- Squeezed orange juice & Dill
- Squeezed orange juice & Organic strawberries
- Squeezed orange juice & mango
- Tomato & strawberries
- Red pepper (organic - 1), Zucchini (1/2), Apple (2), little bit of lemon (1 tbsp), sesame seeds (2 tsp), red onion (1 tbsp) blended (add some water to get desired consistency - you may add salt if you consume it!)
- Many more! Use your imagination! ^_^

Pineapple Spinach delight

Here is something I randomly thought up of a few nights ago. I really enjoyed the combination of the food items, and again, there is nothing combined that shouldn't be. 


Ingredients:
Base:
- Spiralized zucchini & beets


Sauce:
Bunch of spinach
1 cup pineapple (or more, depending on what you like)
Carrots
Tomatoes
BLEND THIS IN MIXER


Garnish with parsley & jerusalem artichoke shreds

Mango Curry & Noodles



Alright! Here it is! My special mango curry recipe. This recipe involves the spice curry, which technically is not 80-10-10, and you WILL sweat out the curry, but to have this once or twice a year as a treat will not kill you :) Or if you really love the curry sweat smell then go ahead and eat it all the time (hehe)


Recipe:
Base: 
- Zucchini noodles (sliced/spiralized - its up to you!)
- Romaine, one head, chopped


Sauce:
- About 1 cup chopped fresh mango or thawed frozen mango
- 1/2 cup fresh young thai coconut water
- 1/4 cup white coconut meat
- Little bit of lemon grass
- 2 tbsp. lime juice
- 1/2-1tsp curry (depending on how much you like)
- 1/2 tsp cumin
- 1/4 cup chopped cilantro
- Whip together in a blender (can add dates for more sweetness if desired)


Pour sauce over noodles and romaine and there you are!

Raw Vegan Low-fat Lasagna - YUMM!

This recipe takes a little longer (or it doesn't have to if you don't want to spend time making it perfect - haha). I find that most of the raw vegan lasagna's out there are PACKED with so many nuts and seeds (too fatty) - although fats are good for you in moderation, you shouldn't eat them in high quantities. In the wild, we wouldn't have access to pre-cracked nuts and seeds, and would have to literally crawl in the trees to obtain the nuts, which would take effort, and then we would have to crack the nuts which would take some time. It would probably take around 10 minutes just to get up the tree, get the nut, get into the nut and eat the edible portion inside. Nowadays we can go to the grocery store, pick up pounds of pre-cracked nuts and eat as we please - not very sensible :\

So here it is, a tried & true yummy tasting raw vegan lasagna that is LOW fat and amazing tasting!


Ingredients:
- As many zucchini as you please (I used 3) - peeled with a vegetable peeler, to make thick wide strips
- Loose organic spinach
- Organic cremini (or white) mushrooms

Tomato sauce:
Tomatoes
Fresh oregano & basil to taste
little bit of squeezed orange & lemon
 ---> Pureé all of this in a blender

"cheese" sauce:
2 tbsp sunflower seeds soaked for 8 hrs
1 tbsp pumpkin seeds soaked for 8 hrs
Left over zucchini from above pieces
lemon
 ---> pureé all of this in a blender

Then, start layering! Start with strips of zucchini, followed by cheese sauce, tomato sauce, spinach and mushroom, and continue layering in this way. And voila!


Doesn't it look pretty?? I haven't had this in about a month, I think its time again! I had fun eating it ^_^

BEST LOW-FAT VEGAN SALSA!!!

Hello lovelies - today I am going to share with you a beautiful salsa that can be used to stuff "lettuce taco's" with, or used as a dip for "zucchini chips" or any other kind of vegetable you can think of that is dip-savvy. 

Ingredients:
- 5-8 Roma Tomatoes, seeds removed & chopped (the inner part of the tomato that is wet should be removed - I just eat it while I'm preparing this)
- 1 Green onion (scallions), chopped
- Red Onion (like 2 tbsp), finely chopped
- 1/2 lime squeezed
- Tad bit of cumin (pinch)
- Cilantro, finely chopped (1/4 cup)
- You can add sea salt, but since I do not eat salt I didn't add it (and it still tasted amazing)
- Mix, let sit over the day, or for 1 hr to incorporate flavours, and SERVE!!


(I put a slice of avocado on top to make it look pretty!)

Yummy Fruit Salad - Proper Food Combining

 I want to talk to you today about FOOD combining! It is so important to properly combine your food. For example, you should not combine acid fruits with sweet fruits, but BOTH acid and sweet fruits can be combined with sub-acid fruits. If these are not properly combined, it can lead to digestive distress (gas, bloating, pain). There are many food combining charts on the internet! Just go on google and type in "Food combining chart"


For example, here is a fruit salad recipe I recently made. Very tasty!


Apples
Oranges
Blueberries


Mix up and eat. I would NOT put a sweet fruit in this such as a banana or dates. That would not be good :)

BEST GREEN JUICE IN THE WORLD!!!

I LOVE this green juice so much. The combination is perfect - a bit of sour, sweet, and green of course. I normally drink 1-2 litres of water right when I get up, then I work out for 30mins-1 hr of cardio. After my cardio, I drink this beautiful green drink! It is packed with essential amino acids that are critical in building up strong healthy muscle in our bodies. I then eat melons about 1 hr after the drink. 




Ingredients:
3 stalks celery
large bunch of cilantro
large bunch of dill
large bunch of parsley
a bunch of spinach
around 4-5 large kale leaves
1 LARGE carrot or 2 smaller ones
Cucumber
Zucchini
LEMON (i like to manually juice the lemon and add it to the drink after)

PASTA TIME!

Okay, here it is, and more to come this week. I came up with this concoction a couple weeks ago, and it is so yummy! So to begin with, here's a photo:




Ingredients:


However many zucchini you feel like
Mango, fresh, chopped
Tomato, fresh, chopped
(can add papaya as well)


Sauce:
Orange juiced 
Dill
(blend together)


Mix everything together until you have this beautiful concoction (I massaged it all with my hands)

Cruelty-free Feather Earrings Coming Soon!

Hello my lovelies, I thought I would post something not food related. I am (hoping) by late summer that my feather jewellery (and rock jewellery) company will be up and running. I also paint and collect drift wood/rock slates off LOTW (lake of the woods), so I am hoping to do something with those as well too. I collect feathers around LOTW as well as contact people, mainly off etsy who collect feathers from their moulting pet birds. For example, these beautiful parrot feathers I recently purchased were from a woman whose pet parrot has shed over the years. I seriously cannot stop looking at them, they're gorgeous!




I have an etsy account (although nothing is up yet, you will SOON see things there to purchase, and for extremely reasonable prices, not $30 some places charge for earrings that required little work put into them - aka. most stores at the mall, etc.) - the account name is "Megacosm" - designs inspired from the one and only mother nature :)

Basic Zucchini Spaghetti & Marinara (all RAW of course & low fat)

Hello all, here is a little recipe I would like to share with you for the time being (until I upload my many photos from my camera from this weeks food items). This is my zucchini marinara sauce, of course you can spiralize/potato peelize/slicer-stylize the zucchini, any way you like. I also added in some spinach to the mix of zucchini. I usually drink a litre of green juice a day (in the morning), so a majority of my greens are taken in in the morning and at night.




Yay! Okay, doesn't it look beautiful! So much yum right there, here is the recipe:


Sauce:
Sun-dried tomatoes (2) (I make my own with no additives in dehydrator)
4-5 tomatoes (either large or cherry - cherry is obviously going to make it taste very good)
1/4 lemon squeezed
1/2 orange squeezed
Fresh basil (3 leaves)
Fresh Oregano (3 leaves)
1/2-1/4 beetroot <--- this will add incredible salty flavour (and dark red colour) to your sauce, without even adding salt! It's amazing :) you can also use the red stems of swiss chard, which are also ridiculously salty tasting - try it!


Serve over a bed of zucchini noodles mixed with spinach and voila!

Jerusalem Artichoke Carrot Soup

I absolutely love this soup. I created it with inspiration from the lovely Jerusalem artichoke:






Jerusalem artichokes taste just like regular artichokes, but you can actually eat these raw, and they taste amazing! They have the crunch of a radish, but the taste of an artichoke - very interesting. SO, I decided to make a soup out of it!




Ingredients:
6 large carrots (or however many you please)
2 Jerusalem Artichokes (or however many you please)
Water till desired consistency (or you could add coconut water to make it a bit salty)
Spartan apples (2) (or however many you please)
Pinch onion (1 tbsp)
Fresh thyme (1 tsp)


Put in blender/vitamix, blend on high, and serve!

What's in my raw food fridge?

Of course, it varies from week, to month, to year, but generally, I stock up on as many greens as I can for juicing, and then romaine/spinach/mixed greens and zucchini for dinner time creations. I then buy as much fruit as I please. I usually purchase around 40 lbs of bananas per shopping trip, pounds of oranges, around 20 or so melons for breakfast, apples to snack on - and I just recently purchased a 16lb box of organic medjool dates from www.7hotdates.com! Best dates I have ever tasted in my life!

What's in my raw food fridge?

Zucchini Mango Pasta

I LOVE Zucchini pasta! It is definitely one of my most favourite dinner foods, and the sauce variations you can make are endless :) - here is one variation that I decided to make, which involves mango (you can use frozen mango if mango's are not in season - this is my case at the moment, all the mango's at the grocery stores are rotten next to the seed and have this horrible sappy taste - this wasn't the case last winter, which confuses me slightly, but perhaps it is just an "off" year)


So, I guess you want the recipe?


Base:
Zucchini (as many as you like), spiralized and ribbonized (haha) I like to mix it up
Spinach
(mix these two together to get it uniform)


Sauce:
Mango
Cherry tomatoes
Basil
Oregano
Freshly squeezed orange and lemon juice
(make this as you like, and however much you please. I never measure anything, I just do it based on my taste. If you want it sweeter, add more mango:tomato ratio, if you want it more tangy, add a larger tomato:mango ratio)


Sprinkle celery on top :)


Hope you enjoy! (and don't forget to carb up before dinner! Eat as MUCH fruit as you please before dinner)



Papaya "fish"



I took a picture of this papaya "fish" I made a couple months ago. I thought he was pretty cute, but I immediately chopped him up so he could go in my salad:




This salad consisted of:
1) Papaya & Mango
2) 2 tbsp of mixed 1-hr soaked pumpkin & sunflower seeds
3) Mixed baby greens with 1 head romaine lettuce


The dressing:
Strawberries & freshly squeezed orange juice, blended together (yum!)


I LOVE this salad, it is one of my favourites, and could eat it every night if I had to.
